Chicken Chili
This chili is hearty and full of smoky, savory flavor with a hint of spice.
To a crockpot add:
2 Chicken breasts
½ Onion, chopped
1 (14.5 oz) can, fire roasted diced Tomatoes
1 (4.5 oz) can, diced Green Chilis
2 cups low sodium Chicken Broth
¼ tsp. Salt
1 ½ tsp. Garlic powder
¾ tsp. Chili powder
¾ tsp. Dried Parsley
¾ tsp. Thyme
¾ tsp. Dill
¾ tsp. Cumin
1 cup White Beans of your choice
Pepper to taste
Cook on low for 4-6 hours or until chicken is done. Remove chicken and shred. Return to crockpot and add:
½ cup Corn
2 oz. Cream Cheese
¼ cup Heavy Cream
Cook for an additional 30 minutes. Stir well. Serve and Enjoy!
