Chicken Chili

This chili is hearty and full of smoky, savory flavor with a hint of spice.

To a crockpot add:

  • 2 Chicken breasts

  • ½ Onion, chopped

  • 1 (14.5 oz) can, fire roasted diced Tomatoes

  • 1 (4.5 oz) can, diced Green Chilis

  • 2 cups low sodium Chicken Broth

  • ¼ tsp. Salt

  • 1 ½ tsp. Garlic powder

  • ¾ tsp. Chili powder

  • ¾ tsp. Dried Parsley

  • ¾ tsp. Thyme

  • ¾ tsp. Dill

  • ¾ tsp. Cumin

  • 1 cup White Beans of your choice

  • Pepper to taste

Cook on low for 4-6 hours or until chicken is done. Remove chicken and shred. Return to crockpot and add:

  • ½ cup Corn

  • 2 oz. Cream Cheese

  • ¼ cup Heavy Cream

Cook for an additional 30 minutes. Stir well. Serve and Enjoy!
