Banana Nut Muffins

In a bowl, whisk to combine:

  • 1 1/2 cups All Purpose Flour

  • 1 1/2 tsp. Baking Powder

  • 1/4 tsp. Baking Soda

  • 1/4 tsp. Salt

  • 2 tsp. Ground Cinnamon

In a separate bowl, add:

  • 3 Ripe Bananas

  • 1/2 cup Sugar

  • 1/4 cup Olive Oil

  • 1 Egg

Using a potato masher or fork, smash the bananas until mostly smooth and ingredients are well combined.

Add flour mixture back into wet mixture and whisk until just combined. Fold in:

  • 1/2 cup Chocolate Chips

  • Pecans (however much makes you smile)

Scoop batter into lined muffin cups, filling cup 3/4 of the way full. Place in a 350 degree oven for 20-25 minutes. Enjoy!
