Fancy Day Lemon Blueberry Muffin
The perfect combination of sweet, fresh blueberries and the ZING of a tart lemon. This recipe is an absolute flavor explosion sure to make the whole family happy.
Whisk together:
2 cups All Purpose Flour
2 tsp Baking Powder
1 tsp Salt
1/2 cup Granulated Sugar
In a separate bowl, whisk together:
2 Eggs
1/2 cup Milk
1/4 cup Sour Cream
1/4 cup Olive Oil
1 tsp Vanilla Extract
Pour wet ingredients into dry and mix until well combined. Then gently stir in:
Zest of 1/2 Lemon
Juice of 1/2 Lemon or 2 tsp.
1 cup Fresh Blueberries
Portion out into lined muffin cups, filling each approximately 2/3 full. Bake at 400 degrees for 20 - 25 minutes.
These muffins are delicious just as they are BUT… the glaze takes them over the top!
For the glaze:
Combine:
3 heaping Tbsp of Powdered Sugar
Zest of 1/2 Lemon
Juice of 1/2 Lemon or approximately 2 tsp.
Mix well and drizzle over cooled muffins
