Fancy Day Lemon Blueberry Muffin

The perfect combination of sweet, fresh blueberries and the ZING of a tart lemon. This recipe is an absolute flavor explosion sure to make the whole family happy.

  1. Whisk together:

    • 2 cups All Purpose Flour

    • 2 tsp Baking Powder

    • 1 tsp Salt

    • 1/2 cup Granulated Sugar

  2. In a separate bowl, whisk together:

    • 2 Eggs

    • 1/2 cup Milk

    • 1/4 cup Sour Cream

    • 1/4 cup Olive Oil

    • 1 tsp Vanilla Extract

  3. Pour wet ingredients into dry and mix until well combined. Then gently stir in:

    • Zest of 1/2 Lemon

    • Juice of 1/2 Lemon or 2 tsp.

    • 1 cup Fresh Blueberries

  4. Portion out into lined muffin cups, filling each approximately 2/3 full. Bake at 400 degrees for 20 - 25 minutes.

These muffins are delicious just as they are BUT… the glaze takes them over the top!

For the glaze:

  1. Combine:

    • 3 heaping Tbsp of Powdered Sugar

    • Zest of 1/2 Lemon

    • Juice of 1/2 Lemon or approximately 2 tsp.

  2. Mix well and drizzle over cooled muffins
