Blueberry Muffins

This simple and delicious muffin is one of my favorite go-to recipes. 25 minutes from start to finish, you will have steamy, homemade muffins ready to enjoy!

To a bowl, whisk together:

  • 1-3/4 cups All-Purpose Flour

  • 2 tsp Baking Powder

  • 1/4 tsp Salt

  • 1/3 cup Granulated Sugar

In a separate bowl, combine:

  • 3/4 cup Milk

  • 1/4 cup Vegetable Oil

  • 1 Egg, beaten

Add wet ingredients to dry, stirring until no large lumps remain. Stir in:

  • Zest of half a Lemon

Gently fold in:

  • 1 cup Fresh Blueberries

Grease or line 12 standard-size muffin cups. Fill each cup 3/4 full with batter. Bake in a preheated 400-degree oven for 20-25 minutes. Muffins should be a gorgeous golden color. Serve and Enjoy!
