Buffalo Chicken Dip’ish Casserole
This dish has all the flavor of a traditional Bufffalo Chicken Dip but is loaded with veggies and nutrients. We love to eat it with low salt tortilla chips but the serving options are endless.
In a oven safe heavy skillet, heat 1 Tbsp Olive Oil over medium high heat. Add:
2 Chicken Breast, diced into bite size pieces
2 stalks Celery, diced
3/4 Green Bell Pepper, diced
1/3 Onion, diced
2 cloves Garlic, chopped
2 tsp Dried Dill
1 Tbsp Dried Parsley
1/4 tsp Salt
Black Pepper to taste
Saute for 3-4 minutes. Then add:
2 cups Fresh Spinach
3 Tbsp White Wine
Juice of 1/2 Lemon
1 tsp Siracha Sauce
Cook an additional 3 minutes or until chicken is cooked through. Add:
6 oz. Cream Cheese
1/4 cup Sour Cream
1/4 Red Bell Pepper, diced
Stir until well incorporated. Top with :
4 oz. Mild Cheddar
2 oz. Mozzerella
Place in 350 degree oven for 5-10 minutes or until cheese is melted. Serve and enjoy!
