Greek Toast

This is my version of greek toast. It is a little quirky, being that it isn’t on toast at all. But it sure is good! This entree is light, refreshing, and surprisingly filling. Go ahead and give it a try.

In a bowl, combine:

  • 1 cup Cucumber, diced

  • 1/2 cup Grape Tomatoes, quartered

  • 1/4 cup Onion, chopped

  • 2 tsp. Dill

  • 1/4 cup Feta Cheese, crumbled

  • 1 Tbsp. Olive Oil

  • 1 tsp. Fresh Lemon Juice

  • Salt & Pepper to taste

Set to the side. Toast:

  • 2 Sourdough English Muffins

Top with cream cheese, cucumber salad, and a fried egg cooked to your preferred doneness. Serve and Enjoy!
