Mer’s Good Salad
This creamy and dreamy salad is so easy to make. A few everyday items combine to bring a sweet, delicate flavor to this fluffy cloud of deliciousness. It is a running joke in our family that we continue to call this a salad when we all know its a downright dessert. Whatever you call it, there is never a drop left over!
In a large bowl, cream together:
8 oz. Cream Cheese, softened
3 Tbsp. Mayonnaise (I use just a regular kitchen spoon rather than a measuring spoon)
Add:
20 oz. can Crushed Pineapple, undrained
10 oz. package Mini Marshmallows
Mix until thoroughly combined: Cover and place in refrigerator for 1-2 hours to allow flavors to meld. Then fold in:
8 oz. container of whipped cream
1/2 cup Pecans (if desired)
Refrigerate or freeze.
*For refrigerated: Cover and place back in refrigerator for at least another 2 hours or overnight. Serve cold.
*For frozen: Transfer mixture to a 9x13 casserole dish. Cover well and place in freezer for at least 4 hours or overnight.
