Peach Cobbler

A Peach Cobbler built for two. It’s the perfect size to share. Wonderfully flavored and lightly sweetened allowing the natural peach to be highlighted. Using the microwave in conjunction with the oven makes this traditional cobbler in half the time.

To a microwave-safe bowl, add:

  • 2 small Fresh Peaches, peeled and sliced or 1-1/4 cups Frozen Freestone Peaches, sliced

  • 1 Tbsp. Brown Sugar

  • 1/2 tsp. Vanilla Extract

  • 1/4 tsp. Ground Cinnamon

  • 1 small pinch Nutmeg

  • 1/8” strip Ginger Paste

  • 1/2 tsp. Cornstarch

  • 1 small pinch Salt

  • 1/3 cup Water

Stir until well combined. Microwave on High for 2 minutes. Stir well. Microwave 1 more minute. Stir and transfer to (2) 6oz ramekins. Set aside.

For the crust, using the same bowl, add:

  • 3 Tbsp. All Purpose Flour

  • 1 tsp. Granulated Sugar

  • 1/8 tsp. Baking Powder

  • 1 small pinch Baking Soda

Whisk to combine. Using a pastry blender cut in:

  • 1 Tbsp. Cold Butter

Flour mixture should look crumbly. Add:

  • 1 -2 Tbsp Milk

Use just enough milk to make a nice thick batter. Place 2 to 3 dollops of batter atop each cobbler. Microwave for 1 minute. Place ramekins on a cookie sheet. Sprinkle with cinnamon sugar if desired. Bake in a 350 degree preheated oven for 20-22 minutes. Filling should be nice and bubbly and the crust a beautiful golden brown. Serve and Enjoy!
