Single Serve Banana Pudding
This is the best of the best. Delicious, from scratch pudding, made right in your microwave! This version is meant to serve one, or if you’re feeling generous, two people in less than 15 minutes.
In a microwave safe bowl, add:
1 Egg Yolk (reserve the white for meringue if desired)
3 Tbsp. Granulated Sugar
2 tsp. Cornstarch
Small Pinch of Salt
Whisk together until well combined and smooth. Then add:
3/4 cup Milk
Whisk together. Microwave on high for 1 minute. Whisk well to keep pudding smooth. Microwave for 30 seconds. Whisk. Cook 30 seconds more. Add:
1 tsp. Butter
1/2 tsp. Vanilla Extract
Whisk to incorporate. Microwave for 30 seconds more.
In a ramekin, layer: graham crackers, bananas, and pudding. Make two layers and top with a fresh meringue, whipped cream, or the topping of your choice. Enjoy!
For Meringue:
Using whisk attachment on electric mixer, froth:
1 Egg White
Once frothy, add:
1 Tbsp. Granulated Sugar
1/4 tsp. Vanilla Extract
Whip until egg white forms a stiff peak (about 2-3 minutes). Place on top of pudding and bake in a 350 degree preheated oven for 5 to 7 minutes, or until meringue is beautifully golden.
