Single Serve Potato Soup

This dish is cozy, creamy, and downright delicious—like a flavor-packed hug for your taste buds!

Microwave 1 Red Potato for 2 - 2 ½ minutes or until tender. Allow to cool while preparing soup.


In a saucepan, saute:

  • 1 piece of Bacon, chopped


Saute for 3 minutes then add:

  • 2 Tbsp Onion, diced

  • ½ stalk Celery, chopped

  • Pinch of Salt

  • Black Pepper to taste


Saute an additional 3-5 minutes then sprinkle in:

  • 1 tsp. Flour

 

Cook for 1 minute then add:

  • ¼ cup Milk


Stir together, scraping up any bits along the bottom of the pot. As milk begins to thicken add:

  • ½ cup Milk

  • Red Potato, cut into bite size pieces


Turn heat down to low and gently stir to combine, add:

  • ½ cube Chicken Bouillon


Allow to simmer for 3 minutes. Add 2 tsp. Dried Parsley. Serve and Enjoy!
