Southern Pot Roast

This is one of those dishes that tastes too good to be this easy. Toss everything into the crockpot and 5 hours later, a delicious dinner is waiting. I hope you enjoy!

You will need:

1-1/2 - 2 lbs Chuck Roast, trimmed and cut into 2-1/2” cubes

Season all sides of meat with:

  • 1 Tbsp Salt

  • 2 tsp Garlic Powder

  • 1/2 tsp Pepper

Place meat in crockpot.

Place the following, in order, as layers over the meat:

  • 4 Red Potatoes, quartered

  • 3 Carrots, unpeeled and cut into 1” pieces

  • 2 stalks Celery, cut into 1” pieces

  • 2 cloves Garlic, chopped

  • 2 Bay Leaves

  • 1 Onion, roughly chopped

  • 2 Tomatoes, cored and sliced

Top with:

  • 1 tsp Oregano

  • 1 tsp Rosemary

  • 1 Tbsp Parsley

  • 1 tsp Cumin

  • 2 tsp Salt and 1/2 tsp Pepper

Drizzle with:

  • 1 cup Low Sodium Beef Broth

Cook for 5 hours or until potatoes are tender. Enjoy!
