Stuffed Bell Pepper Casserole

All the delicious flavor of stuffed bell peppers in an easy to prepare casserole!

In a skillet, saute over medium high heat:

  • 1/2 lb Ground Beef

  • 1/2 Onion, chopped

  • 1 tsp Dried Oregano

  • Pinch of Salt

  • Black Pepper to taste

  • 3 cloves Garlic, minced

  • 1 Green Bell Pepper, cored and sliced

Once meat is cooked through, drain any excess fat from skillet if needed. Then add:

  • 1 tsp Worcestershire Sauce

  • 1/3 cup Minute Rice

Combine and allow rice to toast for 1-2 minutes. Then add:

  • 1 (14.5 oz) can Fire Roasted Diced Tomatoes

  • 1 cup Water

Stir to combine. Cover with lid and allow to simmer over medium heat for 7-10 minutes. Add more rice or water as needed for proper consistency. Have a taste test and make any final adjustments needed in seasonings. Top with:

  • 4 oz Cheddar Cheese, shredded

Allow to melt. Serve with a good crusty bread and side salad if desired. Enjoy!
