Sweet Potato Pie
If you love sweet potatoes, you will LOVE this pie! It has all of the custardy goodness I enjoy in a pie with a punch of flavor coming through. The beautiful color of the sweet potatoes makes it a beauty to look at, as well . Be sure to try this one out at your next family meal. It (and you) will be the star of the show!
Sweet Potato Pie
In a saucepan, add:
2 small Sweet Potatoes
Cover with water. Bring to a boil. Reduce heat, cover and simmer until tender. Drain potatoes and add:
1/2 cup Butter
3/4 cup Marshmallow Creme
Replace cover and allow butter to melt on potatoes for 5 minutes. Mash together until smooth.
Whisk in until well combined:
5 oz. Evaporated Milk
3 Eggs
1 tsp. Vanilla Extract
1/4 tsp. Almond Extract
1 Tbsp. All Purpose Flour
Pinch of Salt
2/3 cup Granulated Sugar
1/4 cup Brown Sugar, lightly packed
1/8 tsp. Ground Nutmeg
1 tsp. Ground Cinnamon
Pour into unbaked pie shell and bake at 350 degrees Fahrenheit for 45-50 minutes or until the center of pie is firm and does not jiggle.
