Avocado Egg Salad

An unexpected twist to a traditional egg salad. Perfect for breakfast, lunch, or anytime of day. 

Servings: 2                                 Cook Time: 15 mins

In a bowl gently combine:

  • 2 hard boiled Eggs, diced

  • 1 Tbsp. Onion, minced

  • ½ Avocado, diced

  • ¼ Lemon, juiced

  • Salt to taste

  • Black Pepper to taste

  • 2 heaping Tbsp. Cottage Cheese

Serve atop 4 pieces of Sourdough Bread. Drizzle each piece with ¼ tsp. Sriracha
