Cinnamon Biscuits

I stumbled across a recipe for Cinnamon Biscuits, made a few tweaks, and my son and I just downed a half dozen of these like it was our job!

So, since The Happy Hensters is all about bringing joy... I bring you my recipe for Cinnamon Biscuits.

Cinnamon Biscuits

Preheat oven to 450 degrees

Sift together:

2 cups all-purpose flour

4 tablespoons white sugar

1 1/2 tsp cinnamon

2 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

Cut in:

1/2 cup cold butter (yep, no diet here 😉)

Stir in:

1/2 cup golden raisins

1/2 cup pecan pieces

Make a well in the center of dry ingredients and add:

1 cup sour cream

1 Tbsp milk

Stir until just combined. Add a splash more milk if needed.

Turn out onto a lightly floured surface. Gently knead 8-10 times. Pat dough out to 1/2" thickness. Cut with biscuit cutter (I just use one of my kitchen drinking glasses). Place on ungreased cookie sheet and bake for 11-14 minutes.

While biscuits are baking, make a glaze by mixing:

1/2 cup confectioners sugar

2 tsp milk

1/4 tsp vanilla extract

1/4 tsp cinnamon

Drizzle glaze over warm biscuits and enjoy!

* I think lemon or orange zest in the glaze would be amazing too 😍
