Blackberry Herb Crusted Pork Tenderloin

Place on a cutting board:

  • 2 Pork Tenderloin, 1 to 1-1/2 lbs each

Cut 4 slots evenly spaced on each tenderloin. In each slot, place 1 sliver of:

  • 2 cloves Garlic, sliced into 8 slivers

In a bowl, combine:

  • 1 tsp. Dried Oregano

  • 1 tsp. Dried Thyme

  • 1 tsp. Dried Basil

  • 1 tsp. Dried Rosemary

  • 1/2 tsp. Kosher Salt

  • Black Pepper to taste

Sprinkle seasonings evenly over tenderloins. Gently massage into meat. Place into a 13x9 casserole dish. Drizzle each loin with:

  • 1 tsp Olive Oil

Roast in a 425 degree oven for 15-18 minutes, or until meat reaches an internal temperature of 150 degrees Fahrenheit. Allow to rest for 10 to 15 minutes. Drizzle with Blackberry Sauce and serve. Enjoy!

Blackberry Sauce

In a small saucepan, saute over medium high heat:

  • 1/4 Sweet Onion, finely minced

  • 1 tsp. Olive Oil

When the onions are becoming tender add:

  • 1 clove Garlic, finely minced

  • 1 pinch Kosher Salt

  • Black Pepper to taste

Saute just until the garlic becomes fragrant, typically 15 to 30 seconds. Reduce heat to medium and add:

  • 1/4 cup Balsamic Vinegar

  • 1/2 cup Blackberry Jam, seedless

Stir until jam in fully melted and continue to cook until sauce begins to boil. Reduce heat to a simmer and allow to cook and reduce for 10 to 15 minutes.
