Coconut-Cashew Granola
Baked to perfection, resulting in delicious clusters that are perfect for snacking or topping your favorite yogurt. Whether you like it soft or extra crunchy, this granola’s got you covered. Just mix, bake, and enjoy!

Cook Time: 40 mins
To a bowl add:
2 cups Old Fashioned Rolled Oats
1 cup unsweetened Coconut Flakes
½ cup Raw Cashews, chopped
¼ cup Honey
¼ cup Coconut Oil, melted
1 tsp. Cinnamon
1 tsp. Vanilla Extract
¼ tsp. Salt
½ tsp. Ginger Paste
Stir until everything is coated evenly. Pour into a greased, parchment paper lined 9x9 casserole dish (or cookie sheet if you like it extra crunchy). Spread out evenly but do not pack down. Place into a preheated 350℉ oven for 12 minutes. Remove from the oven, give a bit of a toss, press granola down in the dish, and return to the oven for an additional 12-15 minutes, or until toasted to the desired level. Cool completely and break into pieces. Store in an airtight container. Serve and Enjoy!
