Zucchini Grinders

This Italian inspired sandwich has a little something for everyone. A warm zucchini filling heaped upon a toasty crunchy bread and topped with fresh mozzarella cheese. What’s not to love?

In a skillet, heat 2 tablespoons of olive oil over medium high heat. Add:

  • 3/4 of a large Onion, diced

  • 3 cloves Garlic, chopped

  • 1 tsp. Dried Basil

  • 1 tsp. Dried Oregano

  • 1 tsp. Dried Parsley

  • Pinch of Salt

  • Black Pepper to taste

Sauté 2-3 minutes until fragrant. Add:

  • 2 medium sized Zucchini, diced

Sauté an additional 2-3 minutes or until vegetables begin to take on a little color. Reduce heat to a simmer and add:

  • 2 cups Spaghetti Sauce

Place lid on skillet and allow to simmer for 10 minutes. Remove lid and cook an additional 5 minutes or until zucchini begins to soften and the sauce is thickened.

Using the bread of your choice (I love a French Baguette) cut bread your desired length for sandwich. Open bread, scooping out the bottom piece to form a well for the zucchini mixture. Butter and season the top piece with:

  • Oregano

  • Salt

  • Pepper

  • Garlic Powder

Spoon zucchini into bottom crust to form a heaping mound. Top with:

  • Fresh Mozzarella Cheese

Place under broiler until cheese is melted and top crust is toasted and golden brown. Sprinkle with fresh parsley. Serve and Enjoy!
