In a sauce pan, add:
Cover with cold water and rinse well. Drain and replace with fresh water. Add:
Place over high heat and bring to boil. Continue cooking until potatoes are fork tender, about 15 minutes.
Drain potatoes well and add:
2 Tbsp Butter
1 Tbsp Cream Cheese
Cover and allow to sit for about 1 minutes, or until butter and cream cheese are softened. Transfer to mixing bowl. Add:
Mix together until light and fluffy. Add additional milk, 1/4 cup at a time, to reach desired consistency.
Top with pats of butter and dried parsley. Serve and Enjoy!
