Pumpkin Chocolate Chip Muffins

This muffin is so moist and contains all the flavors of fall. The surprise of chocolate just takes it to the next level!

Preheat oven to 400 degrees Fahrenheit. Grease and flour muffin pan or use paper liners.

In a mixing bowl, combine:

  • 1/2 cup Granulated Sugar

  • 2 Eggs

  • 1/4 cup Water

  • 1/4 cup Vegetable Oil

  • 3/4 cup canned Pumpkin

Using a whisk, mix until well combined. Then add:

  • 1-1/2 cups All Purpose Flour

  • 3/4 tsp. Baking Powder

  • 1/4 tsp. Ground Cloves

  • 1/4 tsp. Salt

  • 1/2 tsp. Baking Soda

  • 1-1/2 tsp. Ground Cinnamon

  • 1/4 tsp. Ground Nutmeg

  • 1/2 tsp. Ginger Puree

Whisk to combine dry ingredients then incorporate into the wet. Stir in:

  • 1/2 cup Semi-Sweet Chocolate Chips

Fill muffin cups 2/3 full with batter. Bake in preheated oven for 18-22 minutes or until done. Serve and Enjoy!
