Sweet Potato Casserole

To a saucepan, add:

  • 4 Sweet Potatoes, well washed and sliced into 1/4” slices

Cover with water with lid partially on and boil until fork tender. Drain potatoes, reserving 1 cup of liquid. Remove peeling if desired. Place potatoes into an 8”x8” casserole dish.

To reserved cooking liquid, add:

  • 1/2 cup Brown Sugar, lightly packed

  • 2 tsp. Cinnamon

  • 1/8 tsp. Salt

Whisk together and taste. Adjust seasoning as needed. Then whisk in:

  • 1 Tbsp. All Purpose Flour

Pour over sweet potatoes. Cover tightly with foil and bake at 350 degrees Fahrenheit for 20 minutes. Remove foil and sprinkle potatoes with:

  • 1/8 tsp. Salt

  • 1/2 tsp. Cinnamon

  • Zest of half an orange

Top with:

  • Miniature Marshmallows

Return to oven and bake an additional 10-15 minutes, or until marshmallows are puffed and golden brown. Serve and Enjoy!
