Peanut Brittle

In a 1-1/2 qt heavy microwave safe casserole dish, combine:

  • 1 cup Raw Peanuts

  • 1 cup Granulated Sugar

  • 1/2 cup Light Corn Syrup

  • 1/4 tsp. Salt

Stir until well combined. Microwave on high 3 minutes. Stir well. Microwave 3 more minutes. Add:

  • 1 tsp. Butter

  • 1 tsp. Vanilla Extract

Stir well. Microwave 1 minute. Add:

  • 1 tsp. Baking Soda

Stir gently until light colored and foamy. Pour onto greased cookie sheet and spread out to desired thickness. Cool completely. Break into pieces. Store tightly covered for best results.

*Note: This recipe was developed for a 1500 Watt microwave. Please adjust cooking times based on your microwave model.
