Twice Baked Potatoes

Rub each potato with (recipe is for 2 potatoes):

  • 1 tsp Butter

  • 1/2 tsp Seasoning Salt

Wrap potatoes in foil and bake in a 350 degree preheated oven for 1-1/2 to 2 hours, or until tender. Once tender, remove from foil and cut a large oval into the top of each potato, discarding skin. Gently scoop out the pulp into a mixing bowl, leaving a 1/4-inch thick shell. To pulp, add:

  • 2 Tbsp Butter

  • 1/4 cup Sour Cream

  • 1/4 cup Milk

  • 1 Tbsp Heavy Cream

  • Black Pepper to taste

Whip together with a mixer until well combined and potatoes are light and fluffy. Hand stir in:

  • 1 Tbsp Bacon, cooked and crumbled

  • 1/2 cup Cheddar Cheese

  • 1/4 cup Mozzarella Cheese

  • 1 Tbsp Green Onions, chopped

Perform a taste taste and add salt and pepper as needed. Gently fill each potato with mixture allowing it to slightly mound. Top with additional cheeses, bacon, and green onion as desired. Place back into a 350 degree preheated oven for 30-35 minutes. Enjoy!
